In 1939 the Prime Minister renamed the previous Siam in Thailand as part of a nationalization campaign. The upheaval went as far to the kitchen, when Chinese wheat noodles were replaced by Thai rice noodles, and Chinese fried noodles became a Thai dish, pad or phat Thai. Pad means fried, so fried Thai.
