This is not a menu in the classical sense, as all dishes simultaneously come to the table. I have selected a colorful spectrum from Central and South Hesse, the Aale Wurscht actually comes from North Hesse. They have also the Diebchen but with Duckefett (A lard based sauce with much more fat, than mine).

As we get older, our appetite is no longer sufficient for a proper appetizer. That's why I ordered spoons like the ones used in the TV show "The Taste" online.
So far we have only served relatively trivial culinary things with it. So that the spoons don't just lie around in the cupboard most of the time, I'm now thinking of somewhat more complex appetizers for them.

For the hummus, how can it be otherwise with such famous dishes, there are several origins of the name. In Wikipedia there is a stringent reference to an old name for the chickpea. Is possible. It is also possible that the name comes from the city of Homs in Syria, which may have derived its name from the chickpea because it was grown there.
