I developed this recipe a few years ago in the Veneto region of Italy, based on an idea that came from a spur-of-the-moment purchase. Back then, we ate it with ciabatta, but it also goes well with pasta—especially spaghetti. Tomato sauce with plenty of garlic and a bit of heat is always a winner. Instead of ciabatta, I simply served it with a German bake-at-home roll.
This time, the clams were combined with calamaretti.

Ingredients:
30 g onion, coarsely diced
2 Thai chilies, sliced into rings
3 tbsp olive oil
1 small can (400 g) peeled tomatoes
salt
pepper
1 pinch of sugar (only for non-Italians)
1 kg clams
6 baby squid (calamaretti)
Preparation:
Sauté the onion in the oil until translucent. Briefly sauté the chili along with it. Add the tomatoes and crush them. Season with salt, pepper, and sugar, and simmer for 20 minutes. Add the baby squid and simmer for 5 minutes; then add the clams and simmer for another 5 minutes.
Serve with bread, pasta, or rice, as desired.

Das Rezept habe ich vor einigen Jahren mal als Konzept im Veneto/Italien aus einem Spontankauf entwickelt. Wir hatten es damals mit Ciabatta gegessen, das geht aber auch gut zur Pasta, speziell Spaghetti. Tomatensauce mit viel Knoblauch und etwas Schärfe geht immer. Ich habs, anstatt Ciabatta, einfach mit einem deutschen Aufbackbrötchen gereicht.
Dieses Mal wurden die Venusmuscheln mit Calamaretti kombiniert.

Zutaten:
30 g Zwiebeln, grob gewürfelt
2 Thaichili, in Ringe geschnitten
3 EL Olivenöl
1 kleine Dose (400 g) Schältomaten
Salz
Pfeffer
1 Prise Zucker (nur für Nichtitaliener)
1 kg Venusmuscheln
6 Calamaretti
Zubereitung:
Zwiebel im Öl anbraten bis sie glasig sind. Chili kurz mit anschwitzen. Die Tomaten zufügen und zerdrücken. Mit Salz, Pfeffer und Zucker würzen und 20 Minuten köcheln. Die Calamaretti zufügen und 5 Minuten köcheln, danach die Venusmuscheln zufügen und weitere 5 Minuten köcheln.
Wahlweise mit Brot, Pasta oder Reis servieren.
