In the late 1980 years an Asian shop opened in Hoechst, a district in Frankfurt/Germany. We had many Asian shops in our close range, but this new one had the dimensions of a supermarket and we could buy nutritions from every part in eastern Asia. Every part? Shure, they had some nutritions from Indonesia, my favorite Asian kitchen, but Terasi/Trassi??? Oh, no, that stinks so was the answer of the Thai owners of the shop ? .

Spring rolls are known throughout East Asia with countless fillings. I first encountered them as loempia (pronounced Lumpia) in an Indonesian restaurant in the Netherlands. Therefore, my filling has a distinctly Indonesian flavor.
Of course, you could buy them as convenience food, and they don't taste bad. Unfortunately, most of these products contain the infamous E621, monosodium glutamate. This is found in many natural foods like...

This is actually the same combination as my other Thai curries, a source of protein, in this case shrimp, vegetables in nearly equal proportions and with red curry paste and coconut milk. Since the paste already contains salt, a little fish sauce is added for the optimal salt content.
Since neither of us are big fans of eggplants, especially not the small pea-sized ones, the vegetable part consisted of bamboo shoots and red peppers....

This dish was characterized by partially existing ingredients. A good half of the 1 1/2 kg of the cooked mussels in tomato sauce was left over. They had to go. The red Thai curry with chicken was already planned. In addition, some small finger-sized shrimp should be added as a visual highlight on top of the Thai curry. They were already cooked and only needed to be put on top, if I hadn't forgotten them in the kitchen. So they are...

That's another typical improvised meal from the wrist. As you can see from my numerous posts, I am a real carnivore. A Sunday meal without meat or at least fish is not a Sunday meal for me. So I once again stumbled through our Kaufland without a plan in search of, yes, what are we going to eat on Sunday. The problem with something like this is always that I choose something meaty, but then I have to walk back to the entrance because...

It's a kind of standard curry that I use for all types of meat, for fish and seafood, purely vegetarian and, if I would eat that, for tofu.
The proportion of vegetables is always a little more than the proportion of meat. I experimented with eggplants for a long time. Originally both the white eggplant and the little green ones that look like peas were in it. The little greens should actually be edible in Thailand, the things they...

In 1939 the Prime Minister renamed the previous Siam in Thailand as part of a nationalization campaign. The upheaval went as far to the kitchen, when Chinese wheat noodles were replaced by Thai rice noodles, and Chinese fried noodles became a Thai dish, pad or phat Thai. Pad means fried, so fried Thai. Let us hope that this was not taken literally in these politically very troubled times.
My personal changes to the original recipe...
