In Italy, antipasti are appetizers; while they are generally vegetarian, they can easily be supplemented with fish or meat. As with many such dishes, the vegetables used vary according to the season and what is currently ripe. In late summer, these include zucchini, red peppers, eggplants, onions, and orange peppers.
The whole thing doesn’t differ much from Turkish grilled vegetables; only the spices are different.

Ingredients:
1/2 purple eggplant, sliced
1 zucchini, sliced
1/2 red bell pepper, cut into strips
1/2 orange bell pepper, cut into strips
salt
pepper
4 cloves garlic, chopped
olive oil
Preparation:
Salt the eggplant slices on both sides and let them sit for about 15 minutes, then rinse off the salt. Brush a baking dish with oil. Layer the vegetable pieces in the dish in a column-like arrangement and season with salt and pepper. Scatter the garlic over the top and drizzle with olive oil. Grill in the oven at 200°C for 30 minutes.
Serve either on its own or with fish (sardines in oil/tuna) or meat (raw and cooked ham).

Antipasti sind in Italien die Vorspeisen und die sind in der Regel vegetarisch; lassen sich aber auch problemlos mit Fisch und Fleisch erweitern. Wie viele dieser Gerichte wechseln die Gemüsesorten je nach Jahreszeit, was gerade reif ist. Im Spätsommer sind das Zucchini, rote Paprika, Auberginen, Zwiebeln und orange Paprika.
Das Ganze unterscheidet sich nicht sonderlich vom türkischen Grillgemüse, nur die Gewürze sind verschieden.

Zutaten:
1/2 violette Aubergine in Scheiben
1 Zucchini in Scheiben
1/2 rote Paprika, in Streifen
1/2 orange Paprika in Streifen
Salz
Pfeffer
4 Knoblauchzehen, gehackt
Olivenöl
Zubereitung:
Aubergine von beiden Seiten salzen und etwa 15 Minuten ziehen lassen, danach das Salz abwaschen. Eine Blechform mit Öl auspinseln. Die Gemüsestücke darin säulenförmig schichten, mit Salz und Pfeffer würzen. Darüber den Knoblauch verteilen und mit Olivenöl übergießen. Im Backofengrill bei 200° C 30 Minuten grillen.
Entweder pur oder mit Fisch (Ölsardinen/Thunfisch) oder Fleisch (roher und gekochter Schinken) servieren.
