In contrast to trout or char black-forest style, the fish is not breaded like a schnitzel, but only floured. The flour binds non-washable remnants of the mucus and the fish is also nicely crispy on the skin side.

2 portion fishes, trout or char
salt
pepper
flour
fat for frying (oil or clarified butter)
Preparation:
Wash the fish well, cut off the fins with a kitchen scissor. Who has a sufficiently large pan, leaves the heads on (the cheeks are very delicious), otherwise the heads are removed. Season the fish with salt and pepper and toss in enough flour. Fry in plenty of fat until golden brown on both sides.
Serve with a potato salad of your choice.

Im Gegensatz zur Forelle oder Saibling Schwarzwälder Art wird der Fisch nicht paniert wie ein Schnitzel, sondern nur mehliert. Durch das Mehl werden nicht abwaschbare Reste des Schleims gebunden und der Fisch wird ebenfalls schön knusprig auf der Hautseite.

Fett zum braten (Öl oder Butterschmalz)
Zubereitung:
Fische gut abwaschen, die Flossen mit einer Küchenschere abschneiden. Wer eine ausreichend große Pfanne hat, lässt die Köpfe dran (Die Bäckchen sind sehr lecker), ansonsten werden auch die Köpfe entfernt. Die Fische mit Salz und Pfeffer würzen und in ausreichend Mehl wälzen. In reichlich Fett von beiden Seiten goldbraun braten.
Mit einem Kartoffelsalat nach Wahl servieren.
