A typical dish from the Veneto, which is of course already prepared in countless ways and usually served as secondo piatti or main course.

Ingredients:
300 g veal liver, cleaned and cut into strips
2 tbsp olive oil
1 tbsp butter
2 onions, cut into strips
2 cloves of garlic, chopped
30 ml balsamic vinegar
100 ml red or white wine to taste
4 sage leaves, chopped
salt
pepper
Preparation:
Fry the liver in the oil and butter mixture on all sides over high heat, set aside. Fry the onion and garlic until light brown, pour in the balsamic vinegar and wine, reduce to half. Add the sage, pepper and liver, stir well. Briefly bring to the boil and season with salt.
The classic side dish is polenta, but you can also add a piece of ciabatta to soak up the sauce.

Ein typisches Gericht aus dem Veneto, das natürlich auch schon wieder auf unzählige Arten zubereitet und i.d.R. als Secondo piatti also als Hauptgericht serviert wird.

Zutaten:
300 g Kalbsleber, geputzt und in Streifen geschnitten
2 EL Olivenöl
1 EL Butter
2 Zwiebeln, in Streifen geschnitten
2 Knoblauchzehen, gehackt
30 ml Balsamico
100 ml Rot- oder Weißwein nach Geschmack
4 Salbeiblätter, gehackt
Salz
Pfeffer
Zubereitung:
Leber im Öl Butter Gemisch bei hoher Hitze von allen Seiten anbraten, beiseite stellen. Zwiebel und Knoblauch hellbraun braten, Balsamico und Wein angießen, auf die Hälfte einköcheln. Salbei, Pfeffer und Leber zugeben, gut umrühren. Einmal kurz aufkochen und mit Salz abschmecken.
Die klassische Beilage ist Polenta, es geht aber auch ein Stück Ciabatta zum Auftunken der Sauce.
